In this heat I am in favor of spending as little as possible in the kitchen.
So on days like this, when you feel like something sweet and pampering next to the coffee, but not a lot of energy, I pull out the following recipe - plump and buttery oatmeal cookies, rich in chocolate and pecans, which are easy to make, even without a mixer.
Mix all the ingredients in a bowl, send the dough to cool and bake.
Need more persuasion to prepare them?
Put in between any two ice cream cookies you like and you will find that these cookies are just perfect for a cookie.

Ingredients
For the cookie dough:
200 grams of melted butter, lukewarm
½ A cup of dark brown sugar (100 g)
¾ Cup sugar (150 g)
1 teaspoon vanilla extract
2 eggs L
2 cups flour (280 g)
¾ as a baking soda
¾ teaspoon of salt
1 cup thick oats
250 g coarsely chopped dark chocolate
150 grams of chopped pecans
For decoration (optional):
A handful of coarsely chopped dark chocolate
A handful of pecans
From salt from Maldon or Flor de Sal

How to make oatmeal, chocolate and pecan cookies?
1 In a large bowl, whisk together the melted butter, the two types of sugar and the vanilla.
Add the eggs and stir well.
2 Add the flour, baking soda and salt and fold.
Fold in the oats, chocolate and pecans as well.
Cover the bowl and refrigerate for at least two hours.
3 Preheat oven to 180 degrees and line the oven pan with baking paper.
4 Divide the dough into identical balls (40 grams per ball into cookies the size of the picture) and place at relatively large intervals.
5 Mash the cookies a little, and if you want, sprinkle some more chocolate chips, pecans and salt on top.
Keep in mind that cookies spread a lot during baking.

Bake for about 15 minutes, or until the cookies are set on the sides but still soft in the center (the cookies will still be set during cooling).
Cool completely and devour.
