Recipe for the devil cake: the best chocolate cake
Preheat the oven to 190 ° C.
Grease the springform pans and also line the bases with baking paper.
Cut the chocolate into pieces and melt them over a hot water bath while stirring.
For the batter
, sift the flour, baking powder, and baking soda into a bowl.
In a second bowl, beat the butter and sugar until frothy.
Add the vanilla flavor and stir in the eggs one by one.
If the mixture is too runny, stir in some more flour.
Heat the water in the kettle.
Fold the liquid chocolate well into the batter, then gradually stir in the flour mixture, buttermilk and boiling water.
Pour the dough into the molds and smooth it out.
Bake the bases in the oven for about 30 minutes, until they give slightly when pressed down.
Let cool down briefly, then lift out of the tins onto a wire rack.
For the glaze,
beat the sugar, egg white, lemon and orange juice over a hot water bath until frothy.
Then take the bowl off the heat and keep beating vigorously until the mixture has cooled down.
Put one base on a cake plate, coat it with a little glaze, place the second base on top, and then coat the cake all over with the remaining glaze.
Decorate with orange peel if you like.
