"Escape from real life."

The Serendipity 3 restaurant in New York, a veteran domestic tourism powerhouse on the Upper East Side of Manhattan routinely, and a culinary institution looking its way in these times of distress, has never shyed away from gimmicks.
Have been here before, apart from the exaggerated desserts and the atmosphere of happy escapism (sometimes by force, sometimes most force), a hamburger for $ 295 and a Sunday ice cream for no less than a thousand.
Now is the time, apparently, to answer in the affirmative to a question that everyone answers in the affirmative - "Would you like chips with this?"
"Serendipity is really a happy place," explained chef Joe Calderon, "people come here to celebrate something, and escape from real life."
And so, based on these worldviews and mountains of expectations, the current means of escape is created.
French fries, but not just French fries.
Champagne, truffles, gold.

This fried symphony begins - believe it or not - with potatoes from the reputed Chipperbec House in upstate New York.
They are soaked, and cooked confit style, in a mixture of vinegar (made by J. LeBlanc from the French Champagne-Ardenne region) and champagne (Dom Perignon of course), then fried twice (obviously twice, still $ 200 per serving) in goose fat.
This oil was probably a business for simple chips.
The potato pegs, crispy on the outside and soft on the inside, are sprayed at this point with edible gold spray, seasoned with truffle salt and served on a plate with thin but many slices of the precious-mushroom on top, along with a thick cheesy dip, which has some more mushrooms in it.
"The truffle is the main star here," Calderon explained the concept.

This is, without real competition though a Guinness Book of Records checked and confirmed, the most expensive chips in history, and its main purpose - announcing the return of the restaurant after a long and depressing corona shutdown - has been achieved, hugely.
As of this writing, the waiting list of 8-10 weeks for this dose is bubbling.
"A very difficult year and a half has passed for everyone, it's time for some fun," Calderon wished.
We agree with the general lines, but note at the same time that we ate perfect chips last week that cost about 630 shekels less than that.
No truffles of course, but also no waiting list.
Fries.
