The Serendipity 3 restaurant in New York, a veteran domestic tourism powerhouse on the Upper East Side of Manhattan routinely, and a culinary institution looking its way in these times of distress, has never shyed away from gimmicks.

This fried symphony begins - believe it or not - with potatoes from the reputed Chipperbec House in upstate New York.

They are soaked, and cooked confit style, in a mixture of vinegar (made by J. LeBlanc from the French Champagne-Ardenne region) and champagne (Dom Perignon of course), then fried twice (obviously twice, still $ 200 per serving) in goose fat.

This oil was probably a business for simple chips.



The potato pegs, crispy on the outside and soft on the inside, are sprayed at this point with edible gold spray, seasoned with truffle salt and served on a plate with thin but many slices of the precious-mushroom on top, along with a thick cheesy dip, which has some more mushrooms in it.



"The truffle is the main star here," Calderon explained the concept.
