If you have not yet experienced making legume patties, you will find that there is something mesmerizing about the magic of making them from uncooked legumes, but only soaking them.

Their protein creates a stable, crispy and perfect patty, even without the need for an egg.



The orange lentils need only a short soak for an hour in hot water and with the addition of chard and green onions, they get a rich taste and crispy texture.

If there is no chard use spinach or kale leaves and also the Egyptian spice mixture, the doa, can be replaced with another spice mixture you like.

Ingredients

    • ½ Red lentils - soaked for about an hour in hot water

    • 1 bunch of chard (only the green part) - it is also possible Kyle Othred

    • 3 Stem coarsely chopped green onion

    • 3 cloves of peeled garlic

    • 1 large onion, peeled and coarsely chopped

    • 3 tablespoons bread crumbs

    • 1 teaspoon (Egyptian spice mixture)

    • Salt

    • black pepper

    • Olive oil for frying

Preparation

How to make chard and lentil patties?

  • 1 Drain the lentils from the soaking water and put in the food processor together with the chard, green onion, garlic, white onion, bread crumbs and spices.

  • Process in short pulses only until a crumbly mixture is obtained - do not let the mixture become a smooth mash.

  • 3 Make patties from the mixture, heat a pan, add olive oil and fry for 2-3 minutes on each side.

  • 4 Serve with a tehini dip and vegetable salad.
