Harbib Liberzon from their own kitchen: "This is one of the first recipes I posted on my blog, and one of the most beloved, and like many good things in life - this recipe was born by mistake.



" It happened when I used to make rice patties and Persian meat, . When I opened the lid of the pot at the end of cooking I discovered to my surprise that the rice was sticking out of the patties, which gave them a playful, festive and impressive hedgehog look.



"Over the years this recipe has won many versions - I played with the types of meat and changed sauces, only one thing remained constant: the basmati rice. No other rice has ever been able to give patties the same coveted hedgehog look.



" It is important to knead the patty mixture well, A linking factor like flour or egg. Try not to lift the lid during cooking as evaporation is critical for the hedgehog effect. The cooked patties have a delicate texture, so it is best to move them as little as possible,And serve straight inside the festive pot. "

Ingredients

  • For 15-18 hedgehog patties:

    • 500 g minced lamb

    • ⅓1 cups basmati rice

    • 1 teaspoon turmeric

    • 1 finely chopped onion

    • 1 clove crushed garlic

    • 1 cup finely chopped parsley

    • 1 cup finely chopped coriander

    • ½ Finely chopped mint cherries

    • 1 teaspoon salt

    • ½ A pinch of ground black pepper

  • For the sauce (in a low and wide pot 32 cm in diameter):

    • 3 tablespoons olive oil

    • 1 chopped onion

    • 1 can of chopped or crushed tomatoes (400 g)

    • 5-6 pitted prunes

    • 2-3 unit Black Persian lemon, slightly broken

    • 1 teaspoon salt

    • ½ A pinch of ground black pepper

    • ½1 cups

How to make Persian hedgehog patties?

  • 1

    Prepare the sauce:

    Heat 3 tablespoons of olive oil in a wide, low saucepan (sauté) and fry the onion for about 10 minutes on a medium flame until golden.

  • 2 Add the rest of the sauce ingredients including the water and bring to a boil.

    Lower the flame, cover and cook for about half an hour until the sauce thickens slightly, the prunes are completely soft and the lemons release their flavor into the stew.

    Taste and adjust seasoning.

  • 3

    Meanwhile, prepare the patties:

    Mix all the patty ingredients in a bowl and put by hand for 10 minutes to obtain a uniform and crystallized mixture.

    Kneading is important for the uniformity of the texture, so do not skimp and do not be lazy.

  • 4 Form large patties 6-5 cm in diameter, fasten tightly and place in the sauce not densely so that they have room to expand. The sauce should reach up to half the height of the patties. If there is a lack of liquid in the pot, add more boiling water.

  • Bring to a boil again, cover the pot, lower the flame to medium and cook for 20 minutes without opening the lid.

    Serve hot.
