The Boicos for those unfamiliar, are small cheese rolls from the Balkan cuisine, made from simple and light yeast-free dough.
The addition of kashkaval cheese and sesame seeds to the dough makes it so delicious and rich that I slowly started filling it just like burritos.
The result: Boicos burikits - small, crunchy pastries made from dough spiced with kashkabal and sesame seeds that are filled with roasted eggplant and Bulgarian cheese or feta.
Boil a pot with hard-boiled eggs, cut some fresh vegetables, make tahini or buy quality brick and you have a Mediterranean summer meal.
You can pour some ouzo or arak into the adults' glasses and indulge in a few moments of quiet as everyone devours.
Tip:
It is very easy and simple to freeze this dough.
The pastries can be prepared in advance and frozen and there is no need to even thaw.
Just spread with egg and sprinkle with sesame seeds and extend the baking time in about 5-7 minutes.

Ingredients
For the boycott dough:
500 grams of flour
¼ Sesame seeds + a little more to spread over the pastries
½ teaspoon of salt
250 grams of diced butter
150 grams of grated kashkabal cheese
2 eggs (one for dough and one for brushing)
2 cold spoons (if necessary)
To fill roasted eggplant and feta:
2 roasted, peeled and filtered eggplants from liquid
100 crumbled grapefruit
100 g grated hard cheese (yellow / kashkaval or other)
From salt
Black pepper

Preparation
How do you make boycott stuffed with feta and roasted eggplant?
1 Preheat the oven to 180 degrees and prepare the oven pan lined with baking paper.
2 Mix all the fillers and set aside until the filling stage.
3 In a mixing bowl with a guitar hook put the flour with a quarter cup of sesame seeds and salt and mix a little.
Add the grated cheese and mix lightly again.
4 Add the butter and mix.
Once crumbs begin to form add the egg.
Continue to mix until the dough comes together.
If the dough does not come together, add one or two tablespoons of water as needed.
5 Gather the dough by hand and combine into a ball.
Flour a work surface and roll out the dough to a thickness of about half a centimeter.
6 Cut circles out of the dough, place a teaspoon of the filling in the center of each circle and close in a crescent - fasten tightly and transfer to a baking pan.
7 Spread the pastries stuffed with beaten egg and sprinkle over sesame seeds.
8 Put in the hot oven for 15 minutes.
