Raspberry Cookies with Cream Cheese: You will need these ingredients

  • 160 g of flour

  • 1/2 teaspoon baking powder

  • 1 pinch of salt

  • 60 g butter

  • 120 g cream cheese

  • 100 g of sugar

  • 1 egg

  • 1 vanilla pod (scrape out the pulp)

  • Raspberries

  • 2 teaspoons of lemon juice

  • some lemon zest

  • 150 g white chocolate (grated)

Raspberry Cookies with Cream Cheese: How to Make Them

  • Preparation

    : Preheat your oven to 180 degrees top and bottom heat.

    Already mix the flour, salt and baking powder and set it aside.

    Also, take the butter out of the refrigerator in good time so that it becomes a little softer.

  • Put the butter, cream cheese, sugar and lemon zest in a bowl and beat the mixture with a hand mixer until frothy.

    Gradually add the egg, vanilla pulp and flour mixture.

    Then fold in the grated white chocolate.

  • Spread the lemon juice over the raspberries and toss them in a few teaspoons of flour.

    The raspberries are then folded into the dough.

    Then place the bowl in the refrigerator for about an hour.

  • In the meantime, prepare a baking sheet on which to lay out parchment paper.

    Spread several small portions of the dough on top.

    Slide the tray onto the middle rail of your oven and let the biscuits bake for about 15 minutes.

  • Once they are golden brown, you can take them out.

    Let the biscuits cool down a little - and then they are ready.
