Although we sometimes think that making a quiche is a complex process, it is a very simple pastry that is a meal in itself.
The recipe presented here can be used as a basic recipe for any quiche you want to prepare according to the desire and raw materials you have at home.
The first step is a simple and good crunchy dough, which is prepared in a few minutes.
The second stage is the royal filling - a mixture of eggs, cream and a little flour into which you can put almost anything you can think of - caramelized onions, sliced sweet potatoes or beets, mushrooms and / or hard cheeses you like.
This time I chose the most delicious filling in my opinion, of spinach and salted cheese, a filling that you will be happy to find is also the simplest to prepare because the spinach does not need to be roasted, steamed or even fried before, just chopped coarsely and put into a quiche with good salted cheese like bulgarian or feta.

Ingredients
For salty crispy dough:
½2 cups flour (half the amount can be converted to whole spelled flour)
200 grams of cold butter, cut into cubes
½ teaspoon of salt
1 egg
For the spinach and Bulgarian stuffing:
1 cup sweet cream for cooking
2 eggs
1 tablespoon flour
1 coarsely chopped mustard
50 grams of feta or Bulgarian cheese, crumbled

How to make spinach quiche and salted cheese?

quiche dough:
In a mixer bowl with a guitar hook or in a food processor with a metal blade mix the flour with the salt.
Add the butter and mix until crumbly (in a food processor, perform the operation in short pulses).
2 Add the egg and mix just until a lump of dough is formed.
If there is a lack of liquid and the dough is dry and does not crystallize, add a tablespoon or two of cold water.
3 Flour the dough on both sides and roll between two baking sheets and a sheet half a centimeter thick.
4 Place the dough in a pie pan 26 cm in diameter and fasten it tightly to the bottom and edges. Cut the excess dough from the edge of the pan, perforate the dough at the bottom with a fork and transfer to the freezer for half an hour.
Meanwhile, preheat oven to 180 degrees and place the pan with the dough straight from the freezer in the oven for 15 minutes, until the dough is golden.
Remove and cool slightly.

Royal Stuffing:
Sprinkle the spinach leaves and salted cheese over the bottom of the baked quiche.
Mix the eggs, cream, salt and pepper in a bowl and pour over the spinach and cheese.
Return to the hot oven for 15-12 minutes, until the filling is relatively firm and golden.

You can freeze the dough or freeze the whole quiche after baking and thaw when needed.
