For the dough

:

  • 250 g wheat flour

  • 1 packet of dry yeast

  • 0.5 tsp salt

  • 140 ml of water

  • 2 tbsp sunflower oil

  • 70 g bacon

  • 200 g crème fraîche

  • salt

  • pepper

  • nutmeg

Recipe for tarte flambée Alsatian style: the preparation

  • Preheat the oven to 200 degrees top and bottom heat.

  • Mix together wheat flour and dry yeast.

  • Mix salt and sunflower oil with water.

  • Pour the water mixture into the flour mixture and knead everything into a dough.

  • Let the dough rise covered for about an hour.

  • Roll out the dough several times until it is really thin.

  • Then place it on a baking sheet lined with parchment paper.

  • Cut the onions and bacon into small pieces.

  • Mix the creme fraîche with salt, pepper and nutmeg.

  • Brush the dough with the creme fraîche mixture.

  • Spread onions and bacon on top.

  • Put the tarte flambée in the oven and let it bake on the lowest rack for 15 to 20 minutes until it is crispy.
