Gluten-free miso and black sesame cookies

Very simple cookies for those who enjoy sweet with a salty touch, which can also be eaten by celiacs and gluten intolerant.

I am not a very sweet person. That of being carried away by passions, enjoyment and lust does not suit me so much - come on, I tend to boredom - but I would be lying if I said that the sweet does not attract my attention when there is contrast with other flavors, which is the case of this recipe. We're going to make some toasted black sesame and miso butter cookies. By caramelizing the sugar in the butter, we are going to add many more nuances to the sweetness, while raising it thanks to the salty touch provided by the fermented miso paste. Black sesame, roasted and crushed, is a very crazy thing: it brings a powerful nutty flavor that goes well with all of the above. In addition, these cookies are gluten-free, so they can be enjoyed by people with celiac disease and those who are intolerant to this protein.

Although you can prepare them as we are going to explain, they are a perfect base to experiment with: with dark chocolate chips, the bitterness will further enhance the sweet and salty touch;

If you prefer to add nuts such as walnuts or almonds, remember to toast them a little beforehand.

In case you want to turn it into a cookie base for other preparations -such as a cheesecake, for example- you can remove a little of the rice flour and replace it with more cornstarch, to make it more fluffy.

Of course, you can prepare it with wheat flour if the gluten issue is neither going you nor coming.

Difficulty

Find a container to keep them as iconic as the shortbread tin filled with sewing things found in every house.

Ingredients

Makes about 14 cookies

  • 200 g of rice flour

  • 40 g cornstarch

  • 30 g of roasted black sesame

  • 150 g unsalted butter

  • 50 g of egg (approximately)

  • 2.5 tablespoons white miso

  • 175 g white sugar

  • 15 g of honey

  • 3 g of chemical yeast

  • 3 g of baking soda

  • The zest of half a lemon

Preparation

  • Cook the butter in a saucepan until it melts completely and begins to darken a bit (you will also notice it in the smell).

    Add the sugar and cook, stirring, until it becomes a homogeneous mixture similar to toffee.

    Reserve.

  • Mix the rice flour, the cornstarch, the previously crushed black sesame - save a little to decorate -, the baking soda, the bicarbonate, the zest of half a lemon and the miso.

  • Add the melted butter with the sugar to the solid mixture together with the honey and stir until it is perfectly integrated.

    I recommend chilling an hour before bowling.

  • Preheat the oven to 180ºC.

    Roll the dough, leaving enough space between each unit on the tray so that they expand well.

    Cook 12 minutes and remove.

    Sprinkle a little more crushed black sesame on top.

    Let cool for about 20 minutes and they are ready to serve.

    Store those that are not going to be eaten at the moment in an airtight container.
