Kohlrabi lasagna pastry and low-carb cheeses (Photo: Alon Mesika)
Layers, layers of thinly sliced kohlrabi slices interspersed with tomato sauce with whipped cream and cheese.
The Italians make the lasagna we all know based on pasta leaves in the same way and the French have a similar pastry made mostly of layers of potatoes, which they call gratin.
Ines Yanai takes all the good in both and creates a family pastry based on kohlrabi, low in carbohydrates and insanely delicious for the sukkah, for entertaining or just for a pampering dinner.
And if you have not yet tasted kohlrabi in its baked version, it's time to discover the wonder created in its baking, because no matter how fresh it tastes, when it is baked it gets a sweet taste and a wonderful texture reminiscent of potatoes.

Preparation
How to make kohlrabi (gluten-free) "lasagna"?
1 Using a mandolin, thinly slice the kohlrabi into thin leaves.
Place the kohlrabi leaves on a baking sheet lined with baking paper and bake at 180 degrees for 20 minutes until lightly softened.
2 Meanwhile, mix all the sauce ingredients together in a bowl.
In another bowl, mix the mozzarella with the parmesan.
3
Assemble the lasagna:
Grease a medium or round rectangular pan 24 cm in diameter with olive oil and place two layers of kohlrabi leaves. Sprinkle a third of the amount of sauce evenly and sprinkle a third of the cheese mixture over it. Repeat the operation two more times so that there is a total of 3 Layers of kohlrabi.
Finish with sauce and cheese.
Return to the hot oven (180 degrees) for another 30 minutes until the cheese is bubbling from above.
Cool slightly before serving and slicing for everyone.
