Foods that you shouldn't eat raw include
green (i.e. unripe) tomatoes, potatoes, and eggplants
.
As nightshade plants, they contain the toxin solanine and should therefore always be boiled.
Also,
green beans
and other legumes (except peas and snow peas) are toxic when raw because they contain certain proteins that are rendered harmless only by heating.
If, for example
, you eat
legumes

Elderberries
contain the toxin sambunigrin, which can release hydrogen cyanide.
Consumption of large quantities of black elderberries can therefore lead to serious stomach and intestinal problems.
Spinach
can be used in a raw vegetable salad.
However, caution is advised with older petioles: the outer leaves and ribs have a high nitrate content, which is converted into cancer-promoting nitrite in the body.
This is especially dangerous for babies and toddlers.
Incidentally, not only raw potatoes, but also sprouting potatoes are harmful - you should throw them away, no longer boil and eat them.
