FOOD CHECKING. We conducted the survey on these two sauces very popular with young people. Contrary to what one might imagine, a consumption

“Consuming ketchup is consuming sugar,” says Sébastien Loctin, at the head of the organic sauce brands Nod and Quintessens.

The market average is 22% added sugar in the recipe.

»But it is possible to do otherwise!

This ketchup producer proves it by welcoming us to his subcontractor (Le Coq noir, in L'Isle-sur-la-Sorgue) to show us his version.

Potatoes and apple concentrate for the texture, oil, vinegar and spices are poured into a tank, the industrial equivalent of Thermomix.

Organic cane sugar is carefully weighed - Sébastien only uses 3.5% - then added to the other ingredients.

The robot operates a first emulsion.

Then we add the vegetables: organic beets, carrots and onions.

“It might sound weird in ketchup, but vegetables provide natural sugar and fiber.

»At the end, and only at the end, the tomato paste is incorporated.

About fifteen minutes later, a red liquid pours into a metal cart. The ketchup is bottled, labeled and stored before being dispatched to supermarkets. “Here,” says Sébastien Loctin on the back of one of his small glass bottles from his Nod brand, “we are at 11.6 g of total sugars for 100 g of ketchup. "

How about a bottle of Heinz? The front of the label reads 22.8 g of sugar per 100 g of ketchup. "That's a lot", comments soberly Ysabelle Levasseur, dietician nutritionist, thus confirming the words of Sébastien Loctin. Almost a quarter of the sugar in a tomato sauce: that's a lot and it's even huge! Fortunately, in the department of our Franprix supermarket, there is an alternative: on the back of the Amora ketchup “5 well-dosed ingredients”, surprise. “We have 14 g of added sugar per 100 g of product,” notes our health expert. They were able to lower the amount of sugar by increasing the amount of tomato, which is a naturally sweet product. "And Ysabelle Levasseur to point out the" 190 g of tomato for 100 g of ketchup "put forward on the label.

Ricard vs. Pastis 51: which is better (and do they really come from Marseille)?

According to a “poll” that we carried out by posting a question on the Parisian's Instagram account, 54% of the 4,205 voters believe that ketchup is better for your health than mayonnaise.

Except… it's wrong.

“We do not need to consume ketchup because where we will add sugar to our diet when we already consume too much.

In my opinion, it is better to consume a good mayonnaise.

"

What then does the Franprix department offer? Amora's “Dijon mayonnaise”? "Is there anything that shocks you?" Asks Ysabelle Levasseur, reading the label. There is sugar there. »Disqualified. The organic Lesieur? "There's sugar too and we only have sunflower oil," she reads at the top of the list of ingredients. I do not recommend it. Sunflower oil is an oil rich in omega 6 that is already consumed too much elsewhere. »What about Amora“ 5 selected ingredients ”mayonnaise? “It contains 75% rapeseed oil which will provide omega 3, very important for the proper functioning of the brain. It is my favorite. "

But is what constitutes an asset from a health point of view also an asset from a taste point of view? We did the test with Florent Pietravalle, excellent chef at the Michelin-starred restaurant La Mirande, in Avignon. We blindfold him and place two mayonnaise and two ketchups in front of him. “It's too salty,” he comments of Dijon Amora mayonnaise. And the “5 selected ingredients” version? “I have less salt in my mouth but I wouldn't say I like it. "Amora ketchup" 5 well-dosed ingredients "reveals" a taste of fresh tomato, all the same! ". And the regular Heinz: “It's very sweet. It tastes like ketchup from my childhood. ".

In the ranking, the best nutritionally sauces are also found to have the best taste.

Amora mayo "5 well-dosed ingredients" (6.88 € / kg) ahead of Amora "de Dijon" (7.06 € / kg) and Amora ketchup "5 selected ingredients" (4 € / kg) wins on the regular Heinz (4.36 € / kg).

More good news: the winners are also the cheapest.

In summary, for ketchup, it is better to lower the doses and favor the less sweet versions.

For mayonnaise, on the other hand: you can indulge yourself, as long as it is in rapeseed oil.
