Pasta is one of the ultimate dishes to prepare at home.

It is loved by everyone, relatively simple to prepare and the variety options are many.

TIME magazine has published nine tips for making pasta by chef Missy Robbins from the popular Italian lily restaurant in the Williamsburg neighborhood of Brooklyn.

1. You are using a pot that is too small

Always choose a large pot, even if it looks too big for you, and add more water than you think is necessary.

The pasta needs enough space to move freely in the pot so that it is all cooked evenly in the boiling water.

If the pasta looks like it is compressed in a hot bath of boiling water, you have probably skimped on the size of the pot and the amount of water.

In addition, it is important to remember to salt the water generously.

2. You add oil to the cooking water

There is no need to add oil to the pasta cooking water, and the reason for this is simple: the oil "protects" the pasta from the sauce, it prevents the sauce from sticking to it and this is of course something we are not really interested in.

3. You filter all the water in the sink

When you filter the pasta water into the sink, you lose one of the most important ingredients for a perfect pasta (more details in section 5).

What is the solution?

You can cook in a pot with a built-in strainer, so the water is stored in the pot when you remove the strainer.

You can remove the pasta with tongs or with a large perforated spoon (depending on the type of pasta).

It's just important to remember to work fast from the moment you take the pasta out of the water.

4. You discriminate against the classics

Buying expensive artisan pasta in eye-catching shapes and colors is not necessary to make your pasta delicious.

Choose a classic brand, with good taste and consistent quality.

Use a brand that works for you and do not look for adventure.

5. You pour the sauce over the pasta

It may look good in commercials, a picture of someone pouring a jar of sauce on a pile of pasta, but that's completely wrong.

The action should be reversed.

If you are making pasta with sauce you should always add the pasta to the sauce pan and finish cooking there.

These last minutes of pan cooking are essential for the pasta to absorb more flavors.

The condition for success is a slightly shorter cooking in the hot water (i.e. take out the pasta when it is almost ready, al dente).

Add a generous tablespoon of the hot cooking water to the sauce pan, the starch of the pasta in the cooking water will thicken the flavors of the sauce.

6. You use too much sauce

You would not want the pasta you have cooked so carefully to swim in a pool of sauce, no matter how delicious it is.

Try to reach a ratio of a cup and a half - two of sauce to about 450 grams of pasta.

In addition, give the pasta a place of honor, with its own plate, there should be nothing else on the plate when served.

7. You think pasta should be served on a plate

Almost any pasta should be served in a bowl.

From long pasta like spaghetti or fettuccine, to short shapes like rigatoni or gnocchi.

Pasta is a more comforting dish when served in a bowl, more fun to eat, and less likely to cool quickly.

The exception to this rule, is a flat pasta (like ravioli for example) whose shape may spoil in a bowl.

8. You think pasta is only suitable for cold weather

Pasta does not have to be a hot dish, and not every pasta sauce should cook.

Or in short - a pasta salad is an excellent summer dish.

9. You throw away the leftovers

Almost any leftover pasta, (except stuffed pasta), can get new life as a kind of really tasty frittata.

Add some scrambled eggs, lots of grated cheese, and any other ingredient that sounds like a slave, toss in the oven at 170 degrees in a baking dish or heat-resistant pan and you have a great leftover meal.
