With the Covid pandemic, the value of pasta production in the world rises to over 20 billion, of which about a quarter made in Italy, which is by far the leading country internationally. This is what emerges from an analysis by Coldiretti on the occasion of the World Pasta Day at Tuttofood in Milan where farmers and industrialists are present to celebrate the appointment.

In Italy 3.9 million tons of pasta are produced with a supply chain that counts 120 companies, over 10 thousand employees and almost 200 thousand Italian farms committed to supplying the highest quality durum wheat. Over time the pasta shapes have also increased exponentially, reaching 300, while the traditional varieties have been added to those made with wholemeal, gluten free, those with alternative flours and legumes.

But with the pandemic, Italians have also returned to making pasta at home with four out of ten families (41%) who in 2021 tried their hand at rolling pin under the pressure of returning to tradition.

Also thanks to this trend, Italy, Coldiretti recalls, remains the country with the highest consumption of pasta for a quantity of 23.5 kilograms each against Tunisia's 17 kilos, second in this special ranking followed by Venezuela (15 kg), Greece (12 kg), Chile (9.4 kg), United States (8.8 kg), Argentina and Turkey on an equal footing (8.7 kg) which testify to how this type of product has admirers at every latitude .
