A 21-year-old wheel of Parmigiano Reggiano, one of the most aged cheeses in the world, will be auctioned from tomorrow to 6 November on the website of the London auction house Givergy.
The proceeds - explains the Consortium - will be entirely donated to charity.
"The 21-year-old Parmigiano Reggiano - it is explained in a note - is so rare that it is difficult to predict its organoleptic characteristics; however, an amber color with an intense toasted aroma can be hypothesized. The aromatic analysis should highlight the typical notes. of leather, undergrowth, truffle and smoked ".
The shape that will be auctioned saw the light in April 2000 by the Latteria Sociale di Tabiano, in the Reggiano area, at the time led by the late Erio Bertani who, after buying it, had kept it in its warehouse until 2018. , when his wife and children decided to donate it to charity in his memory. The proceeds from the auction will be donated to two solidarity projects promoted by the association 'Aiutiamo il mondo' of Father Marco Canovi, protagonist of various humanitarian activities in Uganda and 'Mama Sofia', founded by Zakia Seddiki, wife of the late ambassador to Congo, Luca Athanasius.
The form will be on display at the International Cheese Festival and the World Cheese Awards to be held in Oviedo, Spain, from 3 to 6 November 2021. (ANSA).
