500 g boiled jacket potatoes from the previous day
1/2 teaspoon sweet paprika powder
salt
1 teaspoon wheat flour
5 tbsp olive oil
2 spring onions
3 tbsp dark balsamic vinegar
black pepper from the mill
2 tomatoes
1 can of sardines in oil (125 g)

Recipe for crispy fried potato salad: quick after-work cooking
Peel the potatoes and cut them into slices.
Mix the paprika powder, 1/2 teaspoon salt and flour and toss the potato slices in it.
Heat 3 tablespoons of olive oil in a non-stick pan and fry the potatoes until crispy, turning occasionally.
Clean the spring onions, cut them into rings and fry them briefly.
Meanwhile, stir together the vinegar, the rest of the oil, a little salt and pepper in a bowl.
Wash the tomatoes, remove the stems, dice the tomatoes and add them to the marinade.
Add the crispy fried potatoes and mix everything loosely.
Season to taste with salt and pepper again.
Divide the fried potato salad on two plates and serve the sardines on top.
(You can leave it out if you like.)
