For the yeast dough:

  • 350 g flour

  • 1 cube of fresh yeast

  • 100 ml of lukewarm milk

  • Lemon zest from an organic lemon

Recipe for Baumstriezel: So easy to make yourself

  • Sift the flour into a bowl.

    Crumble the yeast into the lukewarm milk, add 1 pinch of sugar and 2 tablespoons of the flour, stir everything together and let the mixture rise in a warm place for 10 minutes.

  • Add the sugar and a pinch of salt to the flour, mix everything and make a well in the middle with your hand.

    The egg, the softened butter, the lemon zest and the yeast mixture are placed in the hollow.

    Knead everything into a smooth dough and let it rise in a warm place for about 30 minutes until the volume has doubled.

  • Then knead the dough briefly on a lightly floured work surface and cut it in half.

    Roll out one half of the dough 1 cm thick and cut it into 2 cm wide strips.

    Put the other half of the dough back in the bowl and cover it.

  • Mix the sugar and cinnamon.

    Melt the butter in a saucepan.

    Wrap a rolling pin completely, including the handles, with aluminum foil and then coat the thick part of the wood with melted butter.

    Preheat the oven to 180 degrees top / bottom heat (convection 160 degrees).

  • Wind up the strips of dough tightly, always sticking new strips to the end of the previous one.

    Then roll again on the work surface so that gaps close (do not press too much).

    Brush the dough with melted butter and roll the roll in the cinnamon-sugar mixture so that the dough is completely covered.

  • Place the rolling pin on the baking dish so that it does not touch the bottom of the dish and bake the tree triezel in the oven for 15 minutes.

    Then brush it again with melted butter and bake it at the same temperature for another 10 minutes.

  • Push the finished tree truss from the roll while it is still warm and let it cool down a little (or eat it right away).

    Do the same with the second half of the dough.
