Traditionally, you bake and eat
Stutenkerle
(or, depending on the region, also called
Weckmänner
) around
St. Martin's Day
, but also for St. Nicholas on December 6th.
They consist of a sweet yeast dough and are easy to bake - quite apart from the fact that they are super tasty and make a great souvenir or gift.
They are also great for baking with children who enjoy decorating the little guys with raisins, sugar sugar or almonds.

Recipe: Bake the mare's fellows - the ingredients
Servings: for 8 mare
boys Baking time: 25 minutes
For the dough:
12 almonds
500 g flour (type 550) + a little more to work with
1 cube of yeast (42 g)
250 ml of lukewarm milk
75 grams of sugar
50 g soft butter
1 egg
salt
1 teaspoon of grated organic lemon peel
For decoration:
1 egg yolk for brushing
2-3 tbsp milk for brushing
some raisins
as you wish for the decoration: clay pipes, rods or candy canes
You also need an important tool: a
cookie cutter for mare's guys
or gingerbread men (about 12 cm tall).

Alternatively, you can shape the males yourself from the dough, but this is of course more time-consuming.

How to bake the yeast mare's guys at St. Martin
First pour hot water over the almonds.
You pour this off after about 1 minute and you can press the kernels out of the membranes.
Cut the almonds in half and let them dry on a kitchen towel.
For the yeast dough
, put the flour in a bowl, make a well in the middle and crumble the yeast into it.
Add half of the lukewarm milk, 1 teaspoon sugar and some flour from the edge and stir a little.
Cover the bowl and let the dough rise in a warm place for about 15 minutes.
Then add the remaining lukewarm milk, the remaining sugar, the softened butter in flakes, the egg, a pinch of salt and the lemon zest to the pre-dough.
First knead everything with the dough hook of the hand mixer, then with your hands to form a smooth dough.
Cover the yeast dough for another 30 minutes.
Knead the dough briefly on a floured work surface and roll it out about 1.5 centimeters thick.
Using the floured cookie cutter, cut out eight mare boys one after the other.
Place these next to each other on a baking sheet lined with baking paper.
If you use clay pipes or twigs as rods
for decoration
, press one into the arm of each mare guy.
Let the alarm clock go on the baking sheet for another 20 minutes.
Preheat the oven to 180 ° C top / bottom heat.
Whisk the egg yolk and milk together and brush the mare's guys with it.
Garnish each with raisins and almond halves for eyes and buttons.
Bake the Stutenklerle in the preheated oven on the middle rack in the oven for about 25 minutes until they are golden yellow.
Then let cool down on a wire rack.
