Potatoes are without a doubt the most beloved addition and there are endless ways and recipes that all do a lot of respect to our favorite pima on the plate.
My favorites are oven-baked potatoes - golden and crispy on the outside and tender on the inside.
This recipe of mine for baked potatoes, gets reinforced thanks to a surprising addition of hyssop - not the dried or fresh leaves, but rather the spice mixture.
I got the idea for the surprising addition from Maron, a friend of my eldest daughter who lived in the US for a long time. There he used to eat regularly at a local Israeli restaurant that served a dish spiced with hyssop. The hyssop made them a real delicacy.

5 potatoes - coarsely chopped with the peel
⅓ Olive oil
1 teaspoon salt
2 heaping teaspoons hyssop (the spice)

Preparation
How to make potatoes with hyssop?
1 Preheat oven to 200 degrees.
2 Put the diced potatoes in a large pot with water and boil the apples until they are soft, but
not too soft (until the knife sticks into the apples quite easily).
3 Drain the potatoes from the water in a saucepan, transfer to a baking sheet lined with baking paper, sprinkle with
salt and olive oil and mix well.
4 Put the potatoes in the oven for about 20-25 minutes and occasionally stir the apples so that they get a nice browning from all directions.
5 When the potatoes are ready and browned, take them out of the oven and sprinkle them with the hyssop spice.
Stir and serve immediately.
