Potato borax with fried onions is the most delicious thing in my eyes, but have you ever tried to upgrade it with fresh herbs?

Ingredients

    • 1 packet puff pastry - thawed overnight in the refrigerator

  • For the stuffing:

    • 5 potatoes

    • 1 chopped purple onion

    • 1 chopped parsley

    • 1 cup chopped dill

    • Chopped basil (or fresh oregano leaves)

    • 1 teaspoon salt

    • 1 teaspoon ground black pepper

    • 3 tablespoons olive oil

  • For coating:

    • 1 beaten egg

    • Coarse salt

Preparation

How do you make potato borax and herbs?

  • 1 Peel the potatoes, cut into cubes and cook in a saucepan with lightly salted water until completely softened.

  • 2 At the same time, fry the chopped onion in olive oil until golden.

  • 3 Mash the potatoes into puree, add the fried onions and chopped herbs.

    Season with salt and ground black pepper and mix.

  • 4 Preheat oven to 180 degrees.

  • 5 Open the puff pastry (you can roll it out a little) and divide it into strips 10 cm wide, place a row of potato filling in the center of each strip, close into a rectangle and slightly flatten the filling in the strip with your hands.

  • 6 Place the pastries on a baking sheet lined with baking paper and spread with beaten egg and coarse salt.

    Using a fork, make a pattern along the strip and cut units 5 cm wide with a knife without spaces.

  • 7 Bake in the hot oven for about 30 minutes until browned.

    After baking, cut the slices again with the knife, serve hot.
