3 cups Quinoa Mix (red and white quinoa)
4 tablespoons olive oil
3 cloves finely chopped garlic
1 tablespoon freshly finely chopped ginger or grated
1 basket of champignon mushroom slices
1 basket of portobello mushroom slices
1 basket of Shimaji mushrooms - separated from the root
1 basket of freshly sliced shiitake mushrooms
½ Soy sauce
1 teaspoon sugar
Grated black pepper
2 sliced green onion stalks

How to make stir-fried mushrooms with quinoa?
1 Boil a lot of water in a large pot (like for pasta) add a heaping tablespoon of salt and cook the quinoa while boiling for 15 minutes.
Filter and rinse with cold water.
2 In a large wok or wide, deep saucepan heat the olive oil.
Add the garlic and ginger and fry for a minute.
3 Add the mushrooms and sauté for another 5-6 minutes until the mushrooms begin to turn golden.
It is important to work with a high flame at all times so that the mushrooms turn golden and do not boil and convert liquids.
4 Add the cooked and filtered quinoa, the soy sauce, the ground black pepper and the sugar.
Stir and sauté for 2-3 minutes.
5 Sprinkle with the green onions and serve.
