For the occasion, the Italian Hunter Consortium, with the contribution of the Ministry of Agricultural, Food and Forestry Policies, involved Giuseppe Di Iorio, chef of the starred restaurant Aroma, who created a menu with salami for the whole meal, from millefeuille of robiola, chestnuts and cacciatorino with persimmon sauce up to dessert, a Maritozzo with cream and cacciatorino. The popular salami, an invigorating single portion in hunting trips from which it owes its name,as recalled by the president of the Italian Hunter Consortium Lorenzo Baretta, it is a DOP that enhances 100% Italian pork. Shortly aged, it has as its ingredients the noble cuts of the meat of pigs reared on the national territory, to which only salt and pepper are added.



Established in May 2003, with the aim of protecting and promoting Italian Salamini alla Cacciatora Dop, the Cacciatore Consortium today represents 23 companies and looks with concern at the labeling with Nutriscore which "risks debasing all the agri-food excellence of Made in Italy" .
