Winter brings with it to the markets beautiful and sweet fennel heads that you are simply asked to cook with or roast.

Even those who do not like to eat the fennel fresh, will be surprised to find that in cooking its taste is refined, its texture softens and it becomes a real delicacy.



The pots my mother used to make and waited for us as children on the stove when we returned from school were almost always made using the cooking technique of this pot - put everything together, vegetables and chicken in one pot with the spices and a little water and cook until everything is very soft and juicy.

I always end up putting it in the oven for grilling, which also adds a nice tan to the whole pot.

Roast chicken with fennel

Ingredients

    • 4-5 unit Guard

    • 3-4 unit chicken legs - divided into shank and thigh

    • Salt to taste

    • ½ a teaspoon of turmeric

    • 1 teaspoon fennel seeds

    • 2 slices of pickled lemon

    • ⅓ Whipped cream

    • ½1 cups

Preparation

How to make roast chicken with fennel?

  • 1 Slice the fennel heads into sixes (6 slices) and place them in a pot with the chicken pieces.

  • 2 Add to the pot oil, turmeric, fennel seeds, pickled lemon and salt and with your hands massage the chicken and fennel.

  • 3 Pour the water and cook covered over medium heat for about an hour - until the chicken and fennel are completely tender.

    Meanwhile, preheat oven to 180 degrees turbo.

  • Put in the oven for 20-30 minutes until nicely browned.
