Just this past weekend we posted 9 winning recipes for stews, all of which the main ingredient is meat or chicken and there are some that combine both, but this recipe will prove to you that a stew can easily be vegan as well.
This stew is colorful, varied and full of flavors and textures. A freaky stew into which coarsely chopped vegetables enter that get a short roast beforehand in a high heat oven and the result is wonderful.

Ingredients
For the base of the pot:
1 cupspariki - soak for 5 hours in cold water
5 tablespoons olive oil
1 chopped onion
5 cloves of garlic slices
1 large, chopped tomato
1 teaspoon salt (heaped)
1 teaspoon turmeric
1 tbsp
1 tablespoon sweet (flat) paprika
½ as cinnamon
1 teaspoon ground black pepper
200 g green beans / broad green beans
2 tablespoons silane
Water until covered (no more)
For vegetables (go through roasting before):
2-3 small purple onions - halved
1 large sweet potato - peeled and halved
2 small potatoes
2 Guard - halved or cut into quarters
1 red pepper (gamba) - cut into quarters
2 zucchini - coarsely sliced
Olive oil for lubricating vegetables

Preparation
How to make a vegetable stew and friki?
1 Begin by briefly roasting the vegetables in the oven: Preheat oven to 200 degrees turbo.
Grease the vegetables, place on a baking sheet lined with baking paper, sprinkle with a little coarse salt and roast for about 25 minutes just until tanned.
2 Meanwhile, start preparing the casserole: In a large saucepan (sauté), place the chopped tomato, chopped onion, olive oil and garlic and fry while stirring for 2-3 minutes.
3 Drain the fricassee from the soaking liquid, add to the pot and mix.
Season and mix again.
4 Remove the tanned vegetables from the oven and arrange in a pot - just stick them in the friki.
Sprinkle the green beans and sesame seeds over them.
5 Pour water only until the vegetables are covered and no more and bring to a boil.
6 Lower the flame and cook under partial cover over a medium flame for about 35 minutes until the liquids are reduced.
Or cover the pot with aluminum foil and place in the oven for 45 minutes at 180 degrees.
