Preparation

How to make a vegetable stew and friki?

  • 1 Begin by briefly roasting the vegetables in the oven: Preheat oven to 200 degrees turbo.

Grease the vegetables, place on a baking sheet lined with baking paper, sprinkle with a little coarse salt and roast for about 25 minutes just until tanned.

  • 2 Meanwhile, start preparing the casserole: In a large saucepan (sauté), place the chopped tomato, chopped onion, olive oil and garlic and fry while stirring for 2-3 minutes.

  • 3 Drain the fricassee from the soaking liquid, add to the pot and mix.

    Season and mix again.

  • 4 Remove the tanned vegetables from the oven and arrange in a pot - just stick them in the friki.

Sprinkle the green beans and sesame seeds over them.

  • 5 Pour water only until the vegetables are covered and no more and bring to a boil.

  • 6 Lower the flame and cook under partial cover over a medium flame for about 35 minutes until the liquids are reduced.

Or cover the pot with aluminum foil and place in the oven for 45 minutes at 180 degrees.
