Chef Chen Mizrahi, owner of the Chen in the Kitchen blog, reveals her secret recipe, which makes pancakes healthier and tastier, thanks to whole spelled flour.
Some important tips and information before you start:
* You can easily remember this recipe by heart because most of the ingredients are in a one-to-one ratio (all flour is 1 cup).
* I really like to combine spelled flour in the pastries I make, it has a delicate sweetness And a nutty flavor that adds a lot to pastries and cakes. In any regular recipe that has white flour and I want to add spelled flour, I have a rule where I convert half the amount of white flour into spelled flour. The rule is always successful and works.
* The flours are important to sift near Airy pancakes.
* The small addition of baking soda gives more volume and airiness to pancakes.
* It is important not to mix the pancake mixture too much so that they do not come out hard, mix only until a uniform mixture is obtained and even if some small lumps remain, it is fine.
* I like to fry the pancakes in oil and not in butter.
When frying in protest, after a few frys, the butter burns and the pancakes brown too quickly.
* It is very important to fry the pancakes over medium and not high heat, otherwise they will be made on the outside and inside will still be liquid.

Ingredients
Use of a 250 ml measuring cup:
½ Crushed white flour
½ Spelled whole spelled flour
1 tablespoon sugar
1 bag of vanilla sugar
1 teaspoon baking powder
¼ As a baking soda
From salt
1 egg
1 cup of milk
1 tablespoon oil

Preparation
How to make spelled pancakes?
1 Mix together all the dry ingredients and then add the egg, milk and oil.
2 Predators with a hand whisk until there are almost no lumps left in the mixture (not bad if there are a few small lumps left), avoid over-mixing.
3 Heat a pan over medium heat (not high), add a little oil and spread with absorbent paper over the entire pan.
When the pan is hot, pour in the pancake batter and fry on one side for about 2 minutes.
4 When bubbles begin to form on the surface of the pancake, turn and fry from the other side for another minute.
5 Remove to a plate and continue to fry the rest of the batter.
