Last year's New Year's Eve we were in a deep closure.

The recommended bubbles in that annual traditional review we all drank at home.

This year we will get to New Year's Eve in a little better condition or at least a little less bad.

It will be possible to sip at both restaurants and parties.



The current list includes sparkling at all price levels - from simple local sweets for thirty shekels to expensive champagnes.

The selection of bottles tried to bring worthy representatives to all price categories - with good basic sparklers from the worlds of cava and prosciutto, a quality representative of the local industry and alongside the expensive champagnes there are also two relatively cheap ones, in the genre context - with over 200.

In between is the "Creman't" category - the great abrasion of the bubbling world and probably also of this taste.

No champagne but without the pretension that, on the other hand, "Carmo" proper costs not much more bubbling basic quality dramatically, pricing usually a third and less champagne basic. There are tasting some such. And her face really good course, it is hard to remain indifferent.

Tavor, Pearls 2020 - 36 shekels

The second representative of three in the Israeli wine industry in this year's review is also sweet, but slightly more alcoholic than its predecessor (9%).

It is based on cannley nutmeg grapes, its bubbly is delicate and its flavors show white fruit, a honeyy touch and a subdued sweetness.

A really cute wine of its kind and a great aperitif, which should be sipped when it is really cold.

The cheapest New Year's Eve recommendation this year is sparkling sweet white, with a low alcohol content (5.5), based on Alexandrian nutmeg.

The sweetness is noticeable but balanced and the main characteristic of the wine is its lightness.

Dry prosciutto, with a surprising level of refinement relative to the low level of pricing, is based on Glera grapes from vineyards in Troisso, Piedmont.

Popular and not "high" but without a doubt the most successful bubbling that can be found with a surplus of fifty shekels.

Floral nose and palate, delicate bubbles, pleasant fruit extraction, good acidity and proper dryness.

The beauty of Prosco, sourced from vineyards in Veneto, also provides good value for money.

Lots of cheap cava bottles are sold in wine shops and supermarkets, for New Year's Eve prices are going down further, but not every sparkling alcohol machine called cava is one you are supposed to sip.

There are so many tin caves.

This one from Villernau, based on grapes originating in Catalonia, enjoys good dryness and nice fruit expressions.

The design of the bottle, which is based on Gaudi's work, also adds a dimension of attractiveness in the context of end-of-year party parties.

Not the cheapest cava on the shelf but one that I would definitely improve to sip and even enjoy.

Monterey and Prioli Galera grapes, really fun fruitiness (red fruit and citrus), pleasant bubble and proper freshness.

Sparkling rosé, based on Cabernet Franc grapes from Monroe in Blair Bleuer, France.

Second fermentation in the bottle ("Method Traditional", the same method as in the champagne) and 18 months aging in the bottle.

Red fruit in the nose, rich fruity palate, with good dryness, in a delicate and consistent bubble and many sharpness and precision.

A really great bubble that provides tremendous value for money.

Cote Mas, Creman't De Limoux, Brut - Price: 79 shekels

Sparkling dry white based on 60% Chardonnay, 20% Chenin Blanc, 10% Pinot Noir and 10% Mozak, from vineyards in western Languedoc in southern France.

Winemaking using the "Method Traditional" method and 12 months of aging on the precipitation.

Pale golden color, very refined bubble, lemony nose, rich fruit and excellent acidity on the palate.

Despite the use of chardonnay, which originated in Burgundy, a Mediterranean tone is evident in this bubbling.

Again "Cremo" which provides excellent value for money.

80% Chardonnay combined with 20% Pinot Noir from the Loire Valley.

"Method Traditional" combined with prolonged aging (24 months) on the yeast precipitate.

Delicate and pleasant fruit, delicate bubbles accompanied by consistent bubbling, complexity and multiplicity of nuances.

Another high-quality bubble from the "cremo" category, with relatively little money.

Not many sparkling wines are produced in Israel and there is no doubt at all, for many years, that the Golan Heights winery is a category in itself in the field.

The current bubbling is based on 63% Chardonnay and 37% Pinot Noir from vineyards in the north of the plateau, is produced by the traditional method of winemaking (second fermentation in a bottle) and aged for five years on its yeast sediment.

Red fruit, florality and a bit of citrus can not be ignored in the nose.

On the palate it is full, creamy, rich and complex, with some sweetness at the edges.

This is "Jordan, Brut Rosa" at its best and lovers of the genre - there are many here - fly on it.

"Blanc de Noir" is a white wine made from grapes that are usually used for red wines. This is a really elegant champagne.

As someone who is based on Chardonnay her nose is noticeable in white fruits and flowers.

The palate balances beautifully between fruit and sourness, the bubbles are very small, with a particularly delicate bubble and the palate is incredibly long and delicious.

Bollinger, Special Cuvee, Brut - Price: 355 shekels

Champagne from "Bollinger" based on 60% Pinot Noir, 25% Chardonnay and 15% Pinot Noir.

85% of the wine comes from privileged vineyards in the "Premium Crew" and "Grand Crew" class, intended for high-class "Special Hope" champagnes.

The wines improved between five and 15 years in large bottles and at least another six years later, as a blend in the wineries' cellars.

Champagne at a really high level, with everything one would expect to find a drink in this league: a refined nose, a rich yet nuanced palate, a noticeably bubbling delicacy, good dryness and a long and great palate.
