This champagne sorbet is a treat.

New Year's Eve is the last party of the year and you want to say goodbye to 2021?

Then it's time for a fine New Year's Eve drink *.

Champagne

sorbet takes some time, but isn't difficult to make if you stick to this simple recipe.

Recipe for champagne sorbet: You need these ingredients for the New Year's Eve drink

  • 500 ml of water

  • 250 grams of sugar

  • 375 ml champagne (so the carbon dioxide remains in the bottle after opening)

  • 2 tbsp lime juice (more to taste)

Recipe for champagne sorbet: how to prepare the New Year's Eve drink

  • Bring 500 ml of water with the sugar to a boil in a saucepan and simmer a syrup from it for about five to ten minutes.

  • Let the syrup cool down well, then add half of the champagne and the lime juice.

  • Put the mixture in the freezer and stir it

    with the whisk

    every 30 minutes for

    the next three hours,

    and finally with a spoon.

    Thanks to this technology, no ice crystals will form even without an ice cream machine and the sorbet will be nice and creamy.

  • In the meantime, also cool the glasses or dessert bowls (promotional link) that you want to use for the drink.

  • When the 

    champagne

     sorbet is ready, fill it into a piping bag with a large perforated nozzle and use it to squirt it into the well-chilled glasses.

  • Now all you have to do is fill the glasses with the rest of the champagne and decorate them as you like, for example with lime zest.
