If there is something left over and you don't enjoy drinking champagne, these ideas can help you use it up.

Sparkling wine is not for everyone, but for many people it is still part of toasting.

But what do you do with the leftovers if something is left over?

If you ask yourself this question after New Year's Eve, then these ideas are sure to come to the right place.

Champagne cabbage with leftover sparkling wine

Sauerkraut is a popular side dish, especially in winter.

The variant with champagne tastes extra fine, but

the popular dish can also be conjured up

with dry sparkling wine

.

For four servings you need:

  • 1 thick slice of bacon

  • 2 tbsp sunflower oil

  • 1 teaspoon of sugar

  • 1 onion

  • 1 kg of sauerkraut

  • 150 ml sparkling wine

  • 500 ml vegetable stock

  • 1 tbsp applesauce

  • 5 peppercorns

  • 2 juniper berries

  • 1 bay leaf

  • 80 ml of cream

  • 30 grams of butter

  • salt

  • sugar

How to prepare the champagne cabbage

  • Fry the bacon on both sides in a saucepan with oil.

  • Sprinkle some sugar on top and let it caramelize lightly.

  • Peel and dice the onion finely, put it in the saucepan and sweat it briefly.

  • Add the sauerkraut and sweat it a little too.

  • Delete the whole thing with the sparkling wine and let it boil off almost completely.

  • Then pour in the vegetable stock and let the sauerkraut simmer over medium heat for about half an hour to 35 minutes.

  • After about twenty minutes add the applesauce, the peppercorns, the pressed juniper berries and the bay leaf.

  • When the champagne cabbage has finished cooking, take out the spices and bacon and season again with salt and sugar.

  • Finally, refine the cabbage with cream and butter.
