A marble cake in a classic sense, is the cake that is most fun to make and spread alongside a hot drink, no matter what day and time.



But what if we told you that she has a stunningly simple version of the gluten-free chocolate-vanilla cake?

Ines Yanai, who herself has been trying to avoid gluten lately, in a wonderful recipe for marble cake, coconut flour and almond flour.

Although because of the almond flour the marbled appearance is less noticeable here, two wonderful and soft layers of vanilla chocolate are formed.

Gluten-free marble cake

Gluten-free marble cake

Ingredients

    • 250 ml for sweet cream (1 package) or coconut cream cooled for at least 24 hours

    • ¾ Cup sugar

    • 4 eggs at room temperature

    • 50 grams of melted butter or coconut oil

    • 1 teaspoon vanilla extract

    • ½ Coconut flour

    • ½1 cups ground almonds

    • 1 tablespoon baking powder

  • For the chocolate layer:

    • 100 grams of dark chocolate

    • ½ As a melted coffee

    • 3 tablespoons milk or milk substitute like almond milk

Preparation

How to make a gluten-free marble cake?

  • 1

    Start with the chocolate layer

    - break the chocolate into cubes and place in a small bowl with the coffee and milk.

    Melt in the microwave in pulses of 30 seconds and mix in between until a smooth cream is obtained.

    Alternatively it can be melted in a ban mary.

    Set aside.

  • 2 In a mixer, beat sweet cream and sugar until you get a very soft whipped cream, about 3 minutes.

    Add the eggs one by one and continue to whisk.

  • 3 Add vanilla melted butter and beat until incorporated.

  • 4 In a separate bowl, mix together coconut flour, almond flour and baking powder.

  • 5 Fold the flour mixture into the mass of the eggs with the cream until a uniform batter is obtained.

  • 6 In an English cake pan (or 22 cm diameter pan) lined with baking paper, pour about three-quarters of the amount of batter. Mix the remaining quarter in a bowl with the melted chocolate.

  • 7 Pour the chocolate mixture over the vanilla batter and place in the hot oven.

    Bake for about 40 minutes until a toothpick inserted in the center comes out dry with moist crumbs.

    Cool completely before slicing.
