Quick chickpea stew for your evening after work - ready in 30 minutes

Chickpeas keep you full for a long time, are healthy and are suitable for many different dishes.
This quick chickpea stew will warm you up in winter.
Winter is stew time.
There is nothing more wonderful than sitting at the table or on the sofa after a long, cold day at home and eating a hearty, thick stew with all sorts of good ingredients.
The nice thing about the stew is that there is a recipe for just about every taste.
Those who like something exotic and
don't necessarily need meat
are well served
with this
filling chickpea stew .
Experienced snipers can do it in just 30 minutes.
You need these ingredients for the quick chickpea stew
For four servings you need:
2 cans of chickpeas
2 tbsp neutral vegetable oil
1 medium onion
2 cloves of garlic
a small piece of ginger
yellow curry paste
1 red pepper
1 medium zucchini
2 medium-sized potatoes
1 liter of vegetable broth
salt
Paprika powder

How to prepare the quick chickpea stew
Peel and finely chop the onion and cloves of garlic.
Peel the ginger with a spoon and rub it.
Peel the potatoes and cut them into cubes.
Cut the peppers and zucchini into cubes.
First sauté the onion cubes in a little oil and after a while add the garlic and the grated ginger.
Then add the bell peppers and fry them briefly.
Then pour in the chickpeas and the potato cubes.
Now pour in enough vegetable stock until everything is just covered.
Stir in the curry paste and dose here to taste.
Cook the stew on a medium flame for about 20 minutes, until the potatoes are through.
Add the zucchini to the stew 10 minutes before the end of the cooking time.
Take a potato masher and roughly mash the stew so that it thickens.
But it should still be lumpy.
Season the stew with salt, paprika powder and curry paste.
