The Jews of Eastern Europe have the chicken soup, the Yemenis the famous leg soup and the immigrants from Morocco the hushu - semolina soup with garlic and coriander which is considered the antibiotic of the Moroccan grandmother.
This soup would go up on the stove in our house whenever one of the family members was not feeling well.
Although it is a simple soup in terms of ingredients and very easy to prepare, it is the type of dish whose whole is larger than the sum of its parts.
The taste of garlic and coriander, together with the wonderful texture of the semolina you taste in it create a great and delicious soup.

Ingredients
1 liter of chicken or water stock
5-4 tablespoons oil
3-5 cloves of crushed garlic
¼ a teaspoon of turmeric
½ Chestnut
Salt
1 cup finely chopped coriander

Preparation
How to make felt soup?
1 In a saucepan put the water or stock, add the oil, crushed garlic, salt and turmeric and bring to a boil.
2 When the water is boiling add the semolina and stir constantly for about 10 minutes until the semolina swells and is cooked.
Remove from the heat.
3 Add the coriander, mix and serve.
