Who says you can only bake lemon cake in the summer?
These juicy lemon slices also taste good in winter and are very light thanks to the low-carb recipe.

Servings: For a rectangular baking tin measuring 23 x 33 centimeters Baking

For the ground:
2 eggs
180 g almond flour
1/2 tsp cinnamon
75 g xylitol sugar
55 g coconut oil
1/4 tsp salt
1/2 tsp baking powder
For the filling:
750 g cream cheese
3 eggs
225 g xylitol sugar
Zest from 1 organic lemon – it’s that easy
3 tbsp lemon juice

How to bake easy low carb lemon slices
First grease the baking tin and preheat the oven to 160 °C top/bottom heat.
Mix the ingredients for the base in a bowl to form a homogeneous dough.
Put it in the baking pan and press it firmly to the bottom.
For the filling, use a hand mixer to cream the cream cheese.
Then stir in the eggs one at a time.
Add the remaining ingredients and mix everything into a creamy mass.
Spread the lemon cream cheese filling evenly on the base and bake the lemon cake in the oven for about 45 minutes.
Then take it out, let it cool and chill in the fridge for at least an hour.
To serve, cut the cake into slices.
The low-carb lemon slices are ready!
