Ingredients
2 pounds of asado on the bone
4 Shinisham
Thyme branches
1 tablespoon brown sugar
Generously ground black pepper
Salt generously
Olive oil
For the sauce
A handful of pitted prunes
A handful of dried apricots
1 buckwheat

Preparation
How to make roasted asado?
1 Preheat oven to 160 degrees.
2 Place the slice on baking paper and spread the salt, pepper and sugar over the whole slice, on all sides evenly.
3 Add olive oil and massage the meat well with the ingredients that wrap it.
4 Place the garlic cloves and thyme sprigs on top and roll the slice in the baking paper, if necessary add more baking paper so that the slice is completely wrapped.
5 The slice rolled inside the baking paper, roll again in foil and wrapped tightly like candy.
Put in the oven and bake for about 4 hours.
Remove and refrigerate well.
Up to this point the meat can be prepared in advance.
7 Boil in a pot one cup of water.
8 Add pitted prunes, apricots, salt, pepper and a little sesame.
Bring to a boil and cook for 15-20 minutes.
1010.Add rosemary or thyme to taste.
11 Pour the sauce over the meat, garnish with thyme or rosemary and serve
