Preparation
How to make onion croissant rolls?
1 Fry the chopped onion in olive oil until nicely browned and cool.
2 Place the flour, yeast and sugar in a mixer bowl with a kneading hook and mix for half a minute.
Make a hole and place the rest of the dough ingredients in it, including the fried onion.
4 Put in a mixer for about 6 minutes until a uniform dough is obtained.
Transfer to a lightly greased bowl and cover to swell for 45 minutes
5 After the dough has risen, lower the volume by hand and divide the dough into three parts.
6 On a slightly floured surface, form a ball from each part and roll each into a 1 cm thick sheet (like a pizza). Work with one part at a time and cover the rest.
Using a pizza roller, cut about 12 triangles in the dough (as in a smaller pizza) and roll into a small croissant shape.
Repeat with the rest of the dough and transfer to a baking paper-lined pan.
8 Brush the croissants with beaten egg and sprinkle with a little sesame seeds - optional.
Swell for 25 minutes and meanwhile preheat oven to 180 degrees.
Bake for about 30 minutes, or until golden.
It can be frozen in an airtight container and thawed at room temperature.
