After a year of Corona and closures, Messiah moved on, talented chef Guy Arish has taken his place and now heads it (and does an excellent job), Kitchen Market have managed to close in the current format in the meantime.

But what about Yossi?

Yes, Sheetrit is aiming here as high as possible, and not just in terms of dreams about a Michelin star. Let's call the kid by his name, this is an expensive restaurant. There is no menu to choose from, there is a closed price of 450 shekels per diner (excluding alcohol), which diners do not receive before the meal, but only at the end. "It's like you go to a music show, you do not choose or know in advance what the artist will play, you dedicate yourself to the musical experience, it is also the experience we strive to give to our diners," explains Naama Sheetrit, the chef's wife, who works with him on the project.



Sheetrit, asks diners who come to dedicate themselves to the experience. The reservation is made through the website, where diners are asked to indicate if there are any culinary restrictions, and that is it. Oh wait, there's another little detail. Remember you got upset that restaurants asked you to leave credit as an order deposit? NIS 50 per diner, cancellation until 12 noon? So at HIBA take it one step further. "Everything from everything," says Naama Sheetrit.

The 12-course meal ("even a little more if you count the overtures"), what kind of food?

"This is Yossi's type. It's hard to put him in a certain box. He tries to use a lot of local ingredients, there is of course an influence of the Moroccan cuisine he grew up with, of the area's cuisines like Turkey, influences also from Ashkenazi communities, and a lot of Israeli bloody."



So even though Sheetrit chooses not to publish the menu, and it is also expected to change frequently, for the benefit of the curious among you - we were able to get our hands on the menu that was served with enthusiasm in the first days of its activity.

Among the 12 dishes that appear in it, you will find chicken taco and tahini ambala, Jerusalem artichoke pancake, eggplant and lamb feta "borax", entime and celery sashimi, a smoked cabbage stew with hyssop and shepherd's cheese, shrimp scallops and charcoal-burnt leaves,

The restaurant is built so that there is no separation between the kitchen and the diners, the chefs work on islands in the center of the restaurant, which should create a feeling of homely and inviting hospitality.

The design, including the ceramics created especially for the restaurant, and the artwork in the place, go down to the smallest detail, all involving Sheetrit, in an extraordinary way.

To say that it is not cheap is an understatement.
