Muffins can be a healthy start to the day when you use the right ingredients.

How do you start the day: with Nutella toast or cornflakes?

Delicious – but unfortunately not the healthiest breakfast*.

In the morning, the body needs energy for the day, and some nutrients in breakfast are necessary for this.

Breakfast muffins

offer a welcome change.

valuable ingredients

such as oatmeal and nuts, they are healthy, do not contain refined sugar and still taste sweet.

The muffins are great to prepare, for example the evening before if you have to be quick in the morning.

They can even simply be taken "to go" and are a great way to

Breakfast Muffins Recipe: You will need these ingredients

Servings: Makes 12 muffins


Baking Time: 25 minutes


Difficulty: Easy

  • 125 g wholemeal flour

  • 70 g oat flakes

  • 50 g ground nuts (e.g. hazelnuts or almonds)

  • 80 ml sunflower or rapeseed oil

  • 3 ripe bananas

  • ½ tsp baking powder

  • 1 pinch of salt

  • 1 pinch of cinnamon

The recipe for these breakfast muffins is vegan.

Also delicious:

sweeten your morning with delicious overnight oats with berry puree.

How to bake healthy breakfast muffins

  • Preheat the oven to 180°C top/bottom heat or 160°C fan oven.

    Grease a muffin tin or line the wells with liners.

  • In a bowl, mix flour, rolled oats, nuts, baking powder, salt and cinnamon.

    Mash the bananas with a fork and mix them with the oil.

  • Add the bananas to the remaining ingredients and mix everything to form a homogeneous dough.

    If the mass is too dry, you can add a little more water.

  • Divide the batter into the muffin pan.

    Bake the muffins in the hot oven for about 20-25 minutes.

  • If you don't want to do without the muesli taste in the morning, you can also stir dried fruit or chopped nuts into the dough.

    Grated apples are ideal for fruit fans, or you can add some blueberries.

    As you can see, the basic recipe is changeable and can be adapted according to your preferences.
