4 tips for working with artichokes:

How to choose the perfect artichoke?
Choose an artichoke whose stem is hard, not too thick and not too thin and of a size proportional to the flower. Examine the color of the flower - it should be green and beautiful and without dried edges. It is important to know that older artichokes will usually be more fibrous.

You brought them home, how do you clean?
The artichokes should be put, according to chef Rotem Ben Moyal, in a large glass or jug of water and then inverted so that the water enters all the leaves. Remove from the glass and slam them hard with the direction of the tip, three to four times against the sink. It is recommended to repeat the operation several times. This way you will get rid of all the aphids and hummingbirds among the leaves.
3 If you are purchasing the artichoke to use its heart, keep in mind that fresh artichoke tends to turn black. Therefore, when working with artichokes in the kitchen, prepare a bowl of cold water with lemon juice in advance. Put the clean hearts straight into the bowl (watch the video - how to peel artichokes).

What is the easiest and most delicious way to make them?
Most people are familiar with the traditional version in which the artichokes are cooked in water with lemon, but Noy Baram recommends roasting them in the oven with olive oil, coarse salt and garlic (recipe below).
This way the artichoke gets more flavors from the seasoning and a deeper flavor from the burning in the oven heat.
In this method we prefer to remove the hairs in the heart of the artichoke before entering the oven and serve it clean and ready to eat.
This is in contrast to cooking in water where the hairs are removed while eating.

Ingredients
4 artichokes
6 Inject pearl or large cloves of garlic, in their skins
Olive oil
Coarse salt
To serve:
Scraped with parmesan
Chopped parsley
lemon

Preparation
How to make roasted artichokes?
1 Preheat oven to 180 degrees.
2 Cut the artichokes lengthwise and clean the hairs with a spoon.
3 Place the artichokes on a baking sheet lined with baking paper and arrange the garlic cloves around.
Drizzle with olive oil generously and sprinkle with coarse salt.
Put in the oven for about 25 minutes until they are brown and their flesh is soft - you can check by stabbing a knife in the heart of the artichoke.

How to serve:
Arrange the artichoke halves on a serving plate together with the garlic cloves and sprinkle Parmesan cheese and chopped parsley on top.
You can squeeze some fresh lemon juice from the top.
