A delicious recipe to use up leftovers
Together with eggs, you can easily process leftover fries into a
frittata
(type of Italian omelette) or
tortilla
(Spanish omelette variant with potatoes).
To do this, the eggs are simply whisked and put in the (ovenproof) pan or in a casserole dish with everything else you have at home.
So it doesn't matter whether you still have sausage (chorizo, sausages, bacon), vegetables or cheese in the fridge: simply add it and
cook everything in the oven and gratinate
.
It doesn't matter that the fries are soggy: they work just like leftover potatoes or pasta in the casserole version.
In this respect, frittatas are the perfect leftover food.

Recipe for oven frittata from leftover fries: the ingredients
As I said, you can use whatever ingredients are in the fridge and whatever you like.
You can also vary the quantities freely.

200 g frozen spinach (thawed)
the leftover fries (approx. 150 g)
40 g sausage (small cubes), e.g.
B. chorizo or bacon
4 eggs
75 ml milk
salt and pepper
50 grams of grated cheese

Preheat the oven to 200 °C top/bottom heat or 180 °C circulating air.
Squeeze the thawed spinach well and spread it evenly in the casserole dish.
Put the fries and the pieces of sausage on top.
Whisk the eggs with the milk, season with salt and pepper.
Pour this mixture over the other ingredients in the casserole dish.
Sprinkle the cheese on top.
Put the mold on the middle rack in the oven (which one is actually the middle one if there are four racks?) and bake the oven frittata or oven tortilla for about 20 minutes.
And the leftovers for fries are ready!
Cut the finished
oven frittata
into pieces.
Serve with a salad and everyone will be full and happy.
