Rice always saves us in time for a meal - it is available, inexpensive, loved by everyone and along with water and a little salt in one moment the pot fills up with the white berries.
Rice is also a great base for stir-fries like sautéed rice with meat and colorful vegetables or the Cao Pad dish from Thai cuisine.
This time we opted for a vegan version with spicy tofu.
The tofu and rice are like a smooth sheet to draw on, lovingly accepting the flavors you will give them: garlic, chili, ginger and soy (or teriyaki) the addition of fresh herbs, will give the freshness.

Note
that cold cooked rice should be used, so if you have a pot of rice left from yesterday in the fridge it is a good fit for the job and you have won twice.

Ingredients
For rice:
½1 cups of jasmine or basmati rice (300 g)
½2 boiling cups (600 ml / g)
1 tablespoon oil
1 teaspoon salt
For the tofu stir-fry:
2 tablespoons oil
1 finely chopped onion
3-4 cloves of chopped garlic
1 chopped chili pepper
1 teaspoon grated fresh ginger
1 pack hard tofu, crumbled by hand or coarsely grated
2 as a soy sauce solution
1 tablespoon lemon juice
1 tablespoon brown sugar
1 cup coriander + mint leaves + chopped basil leaves (it is recommended to combine all three, but it is also possible to have only one of them according to what is in the house)

Preparation
How to make stir-fried rice with spicy tofu?

Prepare the rice:
Put in a pot of rice with boiling water, oil and salt.
Bring to a boil, cover and cook for 15-18 minutes over a low flame until completely softened.
Remove from the heat and leave closed for another 10 minutes.
Cool well - it is important that the rice is cold before frying.

Meanwhile, prepare the tofu:
Heat a wok with oil and fry the onion in it for 3-5 minutes until golden.
Add garlic, chili and ginger.
Fry for a minute or two just until it smells wonderful.
3 Add the crumbled tofu, give it a partition with a spatula to burn and season with lemon soy and brown sugar.
Stir or mix well with a wooden spoon until the tofu is colored in soy.
If the tofu seems to dry out, add 2 tablespoons of water and another tablespoon of soy.
It is important that it remains juicy.

Fry everything together:
Add plenty of herbs - chopped basil leaves, mint and coriander and mix.
Add the rice and sauté together until the berries are golden.
