These cookies, which were sold in the Roldin chain on Purim three years ago and were named "Esther's Hearts", were a great success, and their stock ran out very quickly, but we were left with this excellent recipe.
Until we find out that even on Purim this year Roldan will recreate the success, why not bake these wonderful cookies in honor of Valentine's Day?

Ingredients
To dough
200 grams of flour (a cup and a half less a tablespoon)
120 grams of cold butter, cut into cubes
80 g powdered sugar (half a cup and another 2 tablespoons)
1 egg M
20 grams of poppy seeds (a quarter cup)
25 grams of ground almonds (a quarter cup)
1 teaspoon vanilla extract
For perfusion
200 grams of marzipan
50 grams of egg yolk
400 grams of quality strawberry jam

Preparation
How are Esther's hearts made?
1 In a mixer with a guitar hook mix the cold butter cubes and flour until uniform crumbs are obtained.
Add the powdered sugar, ground almonds and poppy seeds and mix.
Add the egg and vanilla extract and mix until a uniform dough is obtained.
Wrap in cling film and refrigerate for about an hour.
2 Meanwhile, mix the marzipan and egg white in a food processor until a uniform, lump-free mixture is obtained.
Place wrapped in cling film until used.
3 Roll out the crunchy dough to a thickness of about 3 mm and roll with a heart clipper about 20 units. Arrange on baking paper and bake in a preheated oven at 170 degrees for about 10-12 minutes until golden.
4 Refrigerate and sprinkle with a sprinkling bag with a small serrated center and a marzipan frame.
Bake again for about 7-10 minutes until lightly golden.
Refrigerators.
Heat the strawberry jam and pour into the hearts.
