When you cook pasta, remember one thing: never just pour the pasta water down the drain.
We'll tell you why.
There is starch in noodles.
This starch is released into the water when the pasta is cooked, so that the pasta water takes on a cloudy colour.

The pasta water is often felt to be impure and is therefore usually thrown away with a clear conscience.
But that is wrong!
Because the
cloudy liquid helps you
to make your pasta sauce even tastier.
Here's how it works: The pasta water combines with your sauce.
The starch changes the consistency of the pasta sauce because it combines pasta, oil and water into an inseparable mixture.
So the starch in your
pasta water is a thickening agent - and a real treat for any pasta fanatic!

So when you catch your pasta water and instead of just throwing it carelessly down the drain, instead mixing some of it into your sauce, you bind the liquids and oils together and create a
creamy, thick and flavorful sauce that sticks to the pasta really well
.
By the way: For this reason, you should not put off
your
pasta even after it has been cooked.
Tip:
If, for routine reasons, you accidentally pour your pasta water down the drain, there are other tricks to
thicken sauces
: for example, the
water from
canned black beans makes your sauce wonderfully creamy.
It is best, however, before
draining the pasta, to use a ladle
to scoop off some of the pasta water once or twice and pour it into a bowl or cup.
You can then tip the noodles into the noodle strainer over the outlet as usual.
