Binyamina, one of the oldest wineries in the country, is currently celebrating its 70th anniversary.
In a country where wine has flourished again in modern times, after years of exile, there are very few wineries whose many years of history involve not only the development of the wine and culinary industry but also the process of establishing the state.
As part of the celebrations of the seventies, the winery is launching a particularly creative and delicious marketing move, celebrating the perfect match between the worlds of wine and culinary, and launching a new series of wines, called Cliffs.

Seven decades of doing
The story of Binyamina Winery begins in 1952, but its roots are deeply rooted in the Third Aliyah period.
In 1925, Baron Rothschild's officials identified the potential inherent in the fields of jasmine flowers in the area of the Binyamina colony, and established a perfume factory there.
In the beginning, the factory was a success, but a global recession led to its closure in 1937.
'Perfum de Binyamina', the great rosé of the winery, is an aromatic tribute to those days.
The perfume may not have worked but the place did not abandon and the jasmine scents were replaced by scents of gunpowder and gunpowder oil.
The factory basement served the defense members as a hiding place for weapons until the establishment of the state.
In 1952, the winemaker Yosef Zeltzer, who immigrated to Israel from Hungary, arrived at the factory, restored the structure and established a winery, named Eliez, after his son who fell in the War of Independence.
In 1994, the winery was acquired by two Israeli filmmakers, Avi Lerner and Danny Dimbort, who changed the name of the winery to Binyamina Winery.
In 2008, the winery was acquired by the owners of the 'semi-free' chain, who invested a lot of resources in the winery, vineyards and human capital.
The winery's vineyards cover the entire country, from the Golan Heights and the Upper and Lower Galilee, through the Jerusalem mountains to Mitzpe Ramon.
The winemaker of the winery has been Yonatan Shots since 2020, along with the winemaker Hagit Elmaleh.

In the sign of a culinary celebration
On the occasion of the 70th anniversary, Binyamina Winery created a match between the winery's wines and four leading chefs selected to take part in the project:
Assaf Sri from Tzemach Restaurant in Jerusalem, Yachi Zino from Pescado Restaurant in Ashdod, Ido Feiner from Roberta Vinci Restaurant in Pardes Hanna and Tomer Tal from George Restaurant In Tel Aviv.
The four chefs who paired the dish created it as a perfect match for their favorite wine from the winery.
In addition, the winery launched a new wine series called Tzukim, which includes two white and two red wines, from grapes grown in the vineyards of the Gilboa Mountains.

Cliffs are sometimes a longing for wine
With all due respect to the culinary arts, the celebrations are primarily about wine, and ahead of its holiday, the winery has given itself - and us, a wonderful gift in the form of a new wine series, a series of cliffs.
The uniqueness of the series, apart from its excellent wines, is mainly a focus on a lesser known wine region in Israel, the Gilboa region, whose unique conditions, such as the combination of high temperature with winds that cool the vines for most of the day, yields a unique crop. .
Binyamina, Cliffs, Chardonnay 2021
The wine, made from vineyards located on slopes 440 meters above sea level and overlooking the Beit She'an Valley, is fermented in a combination of old and new wooden barrels and stainless steel containers, and the result is complex and rich.
The golden wine is characterized by aromas of citrus white fruits and sweet spices, elegant structure, balanced flavors and a long finish.

Seventy percent rosé and thirty marsan, varieties mostly identified with the Rhone Valley in the south of France, have been jointly processed, aged for four months in wooden barrels and produced a wine that combines the body and flavors of rosan orange fruit and the freshness of marsan, with a touch of oak.
A richly flavored wine that will do a very good job alongside richly flavored dishes.

The three red varieties were grown in Kerem Meirav in the Gilboa ridge, fortified and fermented separately, in order to preserve the natural aromas of each, and then aged separately for about fourteen months in wooden barrels, before the final wine was formed from them.
This is a velvety and rich wine with deep flavors of red fruit and spices.
A perfect companion for meat dishes.
