Low-Carb Cake - How to bake the cake without flour and sugar

Normally, for a quark cake, you need sugar as well as flour.
This recipe does not use these ingredients.

Anyone who pays attention to a low-carb diet consciously avoids calories.
When baking, this means that flour and sugar are avoided.
What sounds strange at first is, however, quite possible.
The
low-carb cake without flour and sugar
still tastes sweet and delicious.

Recipe for low carb cake without flour and sugar
Working time
: 20 minutes
Rest time
: 4 hours
Baking time
: 40 minutes
For a 26 springform pan you need the following ingredients:
500 g low-fat quark
120 g grated coconut
60g butter or margarine
1 level tsp baking soda
5 eggs
1 bottle of lemon aroma
10 ml liquid sweetener
Margarine for the springform pan

Low-carb cake without more and sugar: baking instructions
Line the mold with baking paper and then grease it with some margarine.
Now take about 20 g of the
grated coconut and fill the springform pan with it
.
Ideally, everything is completely covered.
Preheat the oven to 150°C for a fan oven.
Meanwhile you can prepare the dough.
First separate the eggs.
Put the yolk in a large bowl and the white in a small one.
Now mix together the
quark, margarine or butter, egg yolks, lemon flavoring and baking soda
using a hand mixer.
A frothy mass should result.
Also stir in the remaining grated coconut and the liquid sweetener.
Add a
pinch of salt to the egg whites
and beat until stiff.
The firm egg whites are then carefully lifted under the batter.
Fill the springform pan with the fluffy batter and smooth it out.
Now put the cake
in the preheated oven for about 40 minutes
.
As soon as the top has turned golden brown, the low carb cake can be covered with aluminum foil.
When removing the cake, keep in mind that it will not be fully baked.
So please be careful here.
However, the usual toothpick test shows you whether the low-carb cake is done.
If nothing sticks to the stick, the cake is done.
It is best to let the cake
cool on a wire rack
.
Then it should be in the fridge for about 3 hours before serving.
This will firm up the shape a little and make it easier to cut the low-carb cake into pieces.
