Preparation
How to make Japanese rice with salmon and vegetables?
1 Rinse the basmati rice well until the water comes out clear.
Strain and set aside on a colander.
2 In a bowl, place the dried shiitake mushrooms, cover with boiling water and soak for about 20 minutes.
3 In another bowl place the salmon.
Add mirin, sake, soy, sugar and salt and soak for about 15 minutes.
4 Meanwhile, cut the carrots and ginger root into matches.
Also cut the connecting base of the shimji mushrooms and separate them.
Squeeze the shiitake mushrooms (keep their soaking water aside), remove the hard stalk and slice the mushroom heads into strips.
5 Put the rice in a large pot, add the glass of water and another half cup of soaking shiitake mushrooms, soy sauce, sake and salt.
Arrange the ginger and carrots and the two types of mushrooms on top of the rice.
Place the salmon slices in one layer over the vegetables and bring to a boil.
7 Cover the pot and cook for about 20 minutes on the lowest heat until the fish is cooked through.
8 Open the lid of the pot and mix while breaking the salmon slices into pieces into the rice.
Serve in bowls and garnish with chopped green onions.
