Rappie Pie: Potato casserole but different than usual!

It gets hearty in the kitchen with chicken and onions.
The
rappie pie
is a traditional Canadian dish, more specifically it comes from the province of Nova Scotia in eastern Canada.
The name derives from the French "patates râpées", which simply means "
grated potatoes
", as that is also the main ingredient.
This is exactly the right recipe for all potato fans!
But meat connoisseurs are also in the right place here: other ingredients are chicken breast and broth.
So it's going to be hearty!

4 tablespoons butter
2 liters of chicken broth
800 g chicken breast
1.8 kg of potatoes
salt and pepper
Variants for the Rappie Pie are prepared with beef, game or seafood instead of chicken.
Just try what you like best.
In the original, by the way, no cheese is added, as is usual with most casseroles.
If you love cheese, however, you can simply sprinkle
grated cheese
over the rappie pie for the last 10 minutes of the baking time and bake it like this.

How to make Rappie Pie Canadian Potato Casserole
Peel and chop the
onions
.
Melt 2 tablespoons of
butter
in a pan and sauté the diced onions over medium-high heat until they turn a nice golden color.
Boil the
chicken broth
in a large saucepan.
Pat the
chicken breast dry
with a kitchen towel, cut into pieces and add to the broth.
Allow the meat to simmer for about 10-15 minutes until cooked through.
Then, scoop out the chicken pieces with a slotted spoon and set aside.
Also, remove the pot of chicken broth from the heat.
Now peel the
potatoes
and grate on a kitchen grater or food processor.
Put the grated potatoes in a clean tea towel and wring it out well so that the liquid is squeezed out.
Season the potatoes in a bowl with
salt
and
pepper
.
Now pour in some broth, the result should have the consistency of oatmeal.
Preheat the oven to
200°C top/bottom heat or 180°C fan
.
Grease a large casserole dish with the remaining butter and place half the potatoes in it.
Scatter over the braised onions and the chicken breasts.
The rest of the potato mixture goes on top.
Place the casserole dish in the hot oven and allow the rappie pie to cook for about an hour.
Pour a few spoonfuls of chicken broth over the casserole from time to time to keep it juicy.
