So what should be done you ask?
Jones argues that butter should be added instead of milk and the egg should be fried over low to medium heat.
"Continue to scramble the egg and fold it with a spatula until the mixture remains a drop of liquid but becomes one lump."

The Daily Mirror reported that Chef Luke Selby also agrees with the fact that milk should not be added to scrambled eggs as many people do.
"It's just a pure sin," he says, "it makes the egg too moist, like a dish served in a school cafeteria."
By the way, despite these warnings from chefs, according to surveys conducted around the world, over 60 percent of people add milk to their scrambled eggs.
Blogger and network star Alon Bar also agrees and explains that the recipe for the perfect scrambled egg comes to us from classic French cuisine and has undergone a rather poor adaptation in Israeli cuisine.
Alon is quick to explain that what we know as scribbled here in the country is actually a torn egg.
Real scrambled eggs are cooked slowly in a pot (rather than in a pan) with butter and cream, and its final texture is as airy as a cloud.

Ingredients
100 grams of butter
5 eggs
Pinch of salt
15% cooking spoon cream (for each egg, optional)

Preparation
How to make the perfect scribble?
1 Melt the butter in a small pot (and not in a pan!).
2 Before the butter is completely melted, add the eggs (do not shake before), the salt and cream and beat them gently over a low heat with a wooden spoon or whisk.
The idea is to stir constantly so as not to let the protein solidify completely (this is also the reason why you cook on a low heat).
3 Remove from the heat when you reach the desired texture (personal taste, but as a rule - the texture should be as thick as soft polenta).
