You can still bake bread and then this hearty mayor's bread.

Spelled and buckwheat are key.

The shelves in the supermarkets are empty in many places.

Sunflower oil in particular, but also wheat flour stocks have shrunk sharply and irresponsible hoarding is also to blame for this, as these reactions to current offers in the supermarkets show* (03/22/22).

Self-sufficient people who want to bake fresh bread are therefore in trouble, but that doesn't have to be the case.

Recipe for mayor's bread without wheat flour: You bake the bread with these ingredients

  • 400 g wholemeal spelled flour

  • 100 grams of buckwheat flour

  • 1-2 tsp salt

  • 2 teaspoons apple cider vinegar (how to make it yourself)

  • 70 grams of flaxseed

  • 70 g sesame

  • 70 g sunflower seeds

  • 1 cube of yeast, fresh

  • 0.5 liters of water, lukewarm

  • Grease or parchment paper for the tin

Baking bread without wheat flour: This is how even beginners can make the mayor's bread

  • Preheat your oven to 220 degrees top/bottom heat and thoroughly grease a large loaf tin.

    Alternatively, you can line them with parchment paper.

  • Dissolve the yeast in some of the lukewarm water (about 37 degrees) and leave it covered for about 10 minutes.

    If it is active, bubbles should form and a faint tickle should be heard.

  • Meanwhile, mix the

    spelled flour and buckwheat flour

    with the salt, vinegar and seeds, then mix in the activated yeast along with the remaining lukewarm water.

  • Process everything into a smooth dough - by hand, in a food processor or with a hand mixer - and fill it into the loaf pan.

  • Bake the

    's bread for 45 to 60 minutes, depending on the oven, without leaving it to rise beforehand.

    Then drop it out of the loaf tin or lift it out together with the baking paper and let it cool down.

  • If you like, you can use more seeds and

    sprinkle them on the bread dough before baking
