Coconut-chocolate cake without flour

Ingredients

  • For 2 English cake tins:

    • 200 grams of sugar (1 cup)

    • 7 eggs (separated into proteins and yolks)

    • 120 g ground coconut (cup and a quarter less a tablespoon)

    • 150 grams of chocolate chips (3/4 cup)

    • 100 g ground bleached almonds (cup)

    • 70 g cornflour (half a cup)

    • 5 g baking powder (teaspoon)

    • 110 grams of canola oil (1 cup + tablespoon)

Preparation

How to make a flour-free coconut-chocolate cake?

  • 1 Mix the chocolate chips with the cornflour so that they do not sink to the bottom of the cake.

  • 2 In a mixer bowl with a whipping balloon, beat the egg whites on medium-high speed.

  • 3 When a white foam is formed gradually add the sugar until a firm foam is obtained.

  • 4 Slowly add the egg yolks and oil and then fold in (while removing some of the air from the batter), all the other ingredients and finally the chocolate chips.

  • 5 Divide equally between two English cake tins sprayed with oil spray.

  • Bake at 160 degrees for about 45-50 minutes until a toothpick inserted in the cake comes out dry.
