Ingredients

    • 200 grams of dark chocolate

    • 150 grams of butter (if you want fur you can convert to 120 grams of coconut oil)

    • 5 eggs (separated into yolks and proteins)

    • 100 g ground almonds (1 cup)

    • 60 grams of sugar (6 tablespoons)

    • 3 tablespoons brandy (you can also have rum or any liqueur you like)

Preparation

How to make a chocolate cake without flour?

  • 1 Melt the chocolate and butter over Ben Marie.

    When a uniform mass is obtained, remove from the pot, add the egg yolks and immediately after that the ground almonds.

  • 2 In a food processor, whisk the egg whites with the sugar until a soft but pliable foam is obtained.

  • 3 Fold the foam into the chocolate together with the brandy and divide into molds.

  • 4 Bake in a preheated oven at 190 degrees, for about 15-20 minutes (bake the cake until it vibrates with cracks, not completely baked).

  • 5 Refrigerate completely and transfer to the freezer.

    A few hours before serving, remove from the pan, transfer to a serving plate and place in the refrigerator.

    Before serving, sprinkle with cocoa.

    Note:

    The most important emphasis is to be careful not to bake the cake too much, but to take it out of the oven when it is very vibrating and with a few cracks.

    After a few minutes the cake will fall and thus remain moist and juicy.
